An automatic machine for pressing boned raw ham, speck, pork loin salami, salted dried beef and similar products to produce “CALIBRATED” brick-type formats with parallelepiped, round, oval, etc. shape, keeping the slice cross-section unaltered and changing the length of the brick as its weight changes.
The upper cylinders exercise considerable pressure on the product with repeated and programmable massages in order to compact it to help the air escape from the inside, as well as the proteolytic phase necessary to keep the slice intact.
On request, it can also be equipped with “Multi-format” moulds composed of blocks of food-grade plastic easily interchangeable to obtain various different product shapes.
The machine allows obtaining – without any offcuts – a product with a constant cross-section irrespective of its weight, and it is particularly suitable to be integrated in highly automated slicing lines. The special moulds are customisable according to the customer’s requirements so that the tastes of a market in rapid evolution can be followed.
New: it is possible to install the new dovetail fastening top blocks.
