An automatic machine for processing boned raw ham and speck in the various conventional formats.
The PCMSA model differs from the conventional model; it features manual loading with high productivity and automatic unloading on a rear belt, as well as dedicated components and systems with a greater pressing force with the aim of reducing the dead times of the production cycle to a minimum.
Pressing is carried out to give the product shape, compactness and homogeneity by means of a cycle of massages (programmable via the touchscreen operating panel) which help the air escape from the inside, as well as the proteolytic phase necessary to keep the slice intact. The considerable pressure exercised contributes to generating heat, which causes partial melting of the fats; to get round this problem, the press is internally cooled, which allows reducing product weight loss and bacterial contamination at the same time.
The machine is equipped with a number of moulds, normally between 2 and 6, easy to disassemble into their parts in order to facilitate format changeover and end-of-production operations.

The machine allows obtaining – without any offcuts – a product with absolutely constant shape characteristics irrespective of its weight.
The special moulds are customisable according to the customer’s requirements so that the tastes of a market in rapid evolution can be followed.
