A semiautomatic machine that cuts the ham shank at the same time facilitating haunch removal and manual gouging of the femoral bone.
It stands out for its reliability and easy accessibility to each single component made possible by the compartmentalization of the electric panel and the pneumatic unit.
The shank is cut by a circular blade with a new 400mm diameter, driven by the NEW IP69K STAINLESS STEEL BRAKEMOTOR, automatically and simultaneously driven by a fully compartmentalized hydraulic control unit, which makes it easier to sanitize the machine.
